Five pounds is a lot of sausage, but I froze most of it in meal-size packs and it held up great. Ground pork is coarse and juicy, and the sweetness is subtle—no heavy spice, so my kids actually ate it.

The fennel comes through without being overpowering, which is exactly what I want in a sweet Italian sausage. Grilled them up with peppers and onions and the casings snapped perfectly instead of turning chewy. Five pounds is a lot, but I went through the first two in a week.
