I was worried these would taste like typical nitrate-free deli meat, but the spice level is spot on and the texture is nice and firm. Slices are thin enough to layer on a sandwich without falling apart.

The gluten free part is what got me, since most deli meats I find have wheat fillers somewhere. These are thinly sliced and just salty enough without being overwhelming, perfect on a sandwich with some provolone.

Picked these up for a road trip and they disappeared before we hit the second rest stop. The no-nitrates thing sold me since I try to avoid that stuff, and the flavor holds up on its own without being overly salty.
