These cooked up so thick and fluffy, way closer to diner pancakes than the boxed stuff I usually grab. The batter holds its shape on the griddle instead of spreading thin, which I'm guessing is that different leavening they use.

Batter sat on the counter while I finished my coffee and it was still fine, no weird early rise like some mixes do. The leavening really does behave differently — pancakes came out tall and fluffy with crisp edges, just like a diner. Restaurant style is right.

Made these for a lazy Sunday breakfast and the batter held up way longer than my old mix without getting bubbly and weird. Pancakes came out thick and fluffy like diner style ones, and I didn't even need to add buttermilk since it's a complete mix.
