Sliced this thin on a charcuterie board and the fennel came through nicely without being overpowering. Nice to find a cured meat with no nitrates added that doesn't taste flat. The casing peels off clean and it holds up well at room temp.

Finally a sopressata that actually tastes clean—no weird aftertaste from preservatives. I've been slicing it thin for Italian sandwiches and the texture is perfect, not too dry.

The peppery kick on this sopressata is way more pronounced than the bland stuff I used to get at the supermarket deli. Sliced thin on a charcuterie board, it held up great without getting oily or greasy.
